Living things need energy for function. Energy is needed to grow, reproduce, move, and to work. We are told by everyone, from doctors and nutritionists to food magazines and newspapers, to eat healthy food... should we? Yes. Nourishing your body with food that nourish is important to ones overall health. Totally agree with that. But not all food is good for you... it's just great  (check out this great article from the Washington Post about that here).

Gorgonzola Gratin

 

Ingredients

  • 2 tablespoons butter

  • 2 1/2 cups heavy whipping cream

  • 3/4 cup crumbled Gorgonzola or other blue cheese (we suggest Alma Blue Cheese)

  • Salt & Pepper to taste

  • 3 pounds baking potatoes, peeled (your preference) and cut into thin slices

  • 1/2 cup grated Parmesan cheese

 

How to Make It

Preheat oven to 375°.

Melt butter in a small saucepan over medium-high heat. Gradually add cream, stirring with a whisk; cook over medium heat until slightly thick, stirring constantly. Stir in the Gorgonzola;  until cheese melts, stirring constantly. Stir in salt and pepper. Remove from heat.

Arrange one-fourth of potatoes in bottom of a 13 x 9-inch baking dish coated with cooking spray; spoon about 3/4 cup sauce over potatoes. Repeat layers twice; arrange remaining potatoes over sauce. Sprinkle with Parmesan. Bake uncovered at 375° until potatoes are tender. Remove from oven; let rest 10-15 minutes before serving.
